According to a French cookbook I found years after first making this, this simple recipe is fairly common in France. But who cares - it tastes great... It's fast and easy - just remember NOT to defrost the peas.

Ingredients
- 1/2 head iceberg lettuce shredded
- 16 oz bag frozen green peas
- 1 Pinch of oregano
Options
- 1 small white onion chopped
Instructions

Put shredded lettuce in a medium pan.

Add just enough water to cover the bottom of the pan.

Add frozen peas on top of lettuce - do not defrost peas.

Add oregano and chopped onion (optional).

Bring water to boil and cover.

Wait a few minutes for lettuce to boil, flavoring peas to perfection.

Serve in a bowl with entire contents of pan (peas, lettuce, water) and enjoy!

Mom gave me 3 things to take to college: an iron, a clothes drying rack ("Don't waste your quarters in the dryer"), and a Reader's Digest cookbook that contained this recipe. My first reaction was "This is strange - boiled peas and lettuce?" Kurt had the same reaction - before he ate ALL the leftovers.
